Potato pancakes (latkes)

Ingredients:
1 lb. russet potatoes, peeled
1 tsp. garlic salt
1 tsp. White / black pepper
2 eggs
3 Tbsp. olive oil
3 Tbsp. grated onion optional
5 Tbsp bread crumbs
Preparation:
Peel potatoes and grate into a large bowl. You should have about 2 cups grated potatoes, loosely packed into measuring cups. Add the eggs bread crumbs and the onion (optional) Toss with garlic salt and pepper and mix all together.
Place the olive oil in a frying pan and medium heat until sizzling. When warm add a spoonful of the blend into the pan, flatten with the back of the tbsp into a small round shape repeat until the pan is used completely. Fry until both sides are crisp and golden brown, transfer to a plate with kitchen paper continue to do the same with the rest of the mixture. Serve hot or cold. Enjoy.
